GREEN ALMONDS
The beautiful and delicate pink and white blossoms of early spring have fallen off our trees; however, the good news is the bees did their job and we are now left with the beautiful beginnings of the fruit to show for it. Right now at the ranch we're in the narrow window of time where our trees are producing "green almonds". This stage lasts only lasts a short 7-8 weeks. These premature almonds are considered a delicacy by many and are quickly becoming a popular item on the gourmet food scene. Although on the outside it can appear to be an almost-developed almond, on the inside it is still quite young. The white almond has a jelly-like texture, almost like that of a grape, with a sweet, earthy taste. Very soon the almond will start to harden as well as the casing around it. While we don't sell our green almonds on the market, they can often be found at Middle Eastern grocery stores and some farmers markets.
